Obiettivi formativi del corso:
Il corso intende fornire agli studenti nozioni sia teoriche che pratiche sui principali metodi analitici impiegati nella determinazione della composizione chimica degli alimenti anche al fine di valutarne la genuinità e qualità. In particolare, al termine del corso lo studente avrà acquisito competenze per la determinazione dei principali componenti (acqua, lipidi, proteine, carboidrati), di additive e sostanze indesiderate o di nutraceutici negli alimenti e bevande anche in relazione alle modificazioni indotte dai processi produttivi.

The topics covered in the course are the following.
- Series of functions: general theory, power series and Fourier series.
- Differential calculation for curves.

Differential calculus for real scalar functions of several variables:
limits in several variables, partial derivatives and directional
differentiability. Free and constrained optimization.
- Integral calculation in several variables.

Differential and integral calculus for functions with vector values:
integral calculus on curves and surfaces. Vector fields. Green theorem,
Stokes theorem and Divergence theorem.
